Preparation
- Grate the zucchini and place it in a colander, then sprinkle with salt and let it sit for 10 minutes to draw out excess water. Squeeze the zucchini dry using a clean kitchen towel.
- In a large bowl, combine the squeezed zucchini, flour, egg, grated Parmesan cheese, garlic powder, salt, and black pepper. Mix until just combined, being careful not to overmix.
Cooking
- Heat vegetable oil in a large skillet over medium heat. Once hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of a spoon.
- Cook for 3-4 minutes per side, or until golden brown and cooked through. You may need to work in batches to avoid overcrowding the pan.
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
Notes
For extra flavor, you can add a pinch of dried dill or chives to the batter. These fritters are best served immediately, but leftovers can be reheated in a toaster oven for crispiness.
