Preparation
  1. Rinse the wild rice thoroughly under cold water; then, dice the onion, celery, and carrots into small, uniform pieces.
Cooking
  1. Melt the butter in a large saucepan over medium heat; add the diced onion, celery, and carrots, cooking until softened (about 5-7 minutes).
  2. Stir in the rinsed wild rice, chicken broth, salt, and pepper; bring the mixture to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes or until the rice is tender and the liquid is absorbed.
Serving
  1. Fluff the wild rice pilaf with a fork and serve hot as a delicious side dish.

Notes

For added flavor, you can toast the wild rice in the butter for a few minutes before adding the broth. You can also substitute vegetable broth for chicken broth to make it vegetarian.
