  • 1.5 lbs Boneless, skinless chicken breasts
  • 1 tbsp Olive oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 Canned great northern beans (15 oz) cans, rinsed and drained
  • 1 Canned diced green chilies (4 oz) can
  • 4 cups Chicken broth
  • 1 tsp Ground cumin
  • 0.5 tsp Dried oregano
  • 1 tsp Chili powder
  • 4 oz Cream cheese softened
  • 0.5 cup Half-and-half
  • Salt to taste
  • Black pepper to taste

Method
 

Instructions
  1. Heat olive oil in a large pot over medium heat, then cook chicken breasts until browned and cooked through; remove, shred, and set aside.
  2. Add chopped onion to the pot, cook until softened, then stir in minced garlic and cook until fragrant.
  3. Combine beans, green chilies, chicken broth, cumin, oregano, and chili powder in the pot; simmer for 15 minutes to blend flavors.
  4. Stir in softened cream cheese until melted, then add half-and-half and simmer for 5 minutes until chili thickens.
  5. Return shredded chicken to the pot, stir, season with salt and pepper, and serve hot.

Notes

For a spicier chili, add an extra jalapeƱo or a pinch of cayenne pepper. Garnish with your favorite toppings like shredded cheese, sour cream, or fresh cilantro.
