  • 4 cups watermelon cubed, seedless
  • 1 cucumber peeled and chopped
  • 0.5 red bell pepper chopped
  • 0.25 red onion chopped
  • 2 tbsp lime juice
  • 0.25 cup fresh mint chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation
  1. Combine all ingredients: In a large blender, combine the cubed watermelon, chopped cucumber, red bell pepper, red onion, lime juice, fresh mint, salt, and black pepper.
  2. Blend until smooth: Blend the mixture until it is completely smooth, stopping to scrape down the sides as needed.
  3. Taste and adjust: Taste the gazpacho and adjust seasonings if necessary, adding more salt, pepper, or lime juice to your preference.
  4. Chill thoroughly: Pour the gazpacho into a pitcher or a large bowl, cover, and chill in the refrigerator for at least 30 minutes, or until thoroughly cold.
  5. Serve chilled: Serve the watermelon gazpacho chilled, garnished with extra mint leaves if desired.

Notes

For a spicier kick, add a small piece of jalapeƱo to the blender. You can also strain the gazpacho for a smoother consistency if desired.
