- Sauté the chopped onion and minced garlic in olive oil in a large pot until softened.
- Add the diced tomatoes and vegetable broth to the pot, bring to a simmer, and cook for 15 minutes.
- Stir in the fresh basil, then blend the soup until smooth, and season with salt and pepper to taste.
Notes
For extra creaminess, stir in a splash of heavy cream or a dollop of Greek yogurt after blending. Serve hot with a crusty bread or grilled cheese sandwich.
