For the Sweet Potato Base
  • 3 pounds sweet potatoes peeled and cubed
  • 0.5 cup unsalted butter melted
  • 0.25 cup milk
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
For the Pecan Streusel Topping
  • 0.5 cup all-purpose flour
  • 0.5 cup light brown sugar
  • 0.5 cup pecans chopped
  • 0.33 cup unsalted butter melted
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.125 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Boil the peeled and cubed sweet potatoes in a large pot of lightly salted water for 15-20 minutes until they are very tender; then drain them well.
Make the Sweet Potato Base
  1. Transfer the drained sweet potatoes to a large bowl and mash them thoroughly.
  2. Add the melted butter, milk, granulated sugar, vanilla extract, and salt to the mashed sweet potatoes, mixing until smooth and well combined.
Prepare the Streusel Topping
  1. In a medium bowl, combine the flour, brown sugar, chopped pecans, melted butter, cinnamon, nutmeg, and salt.
  2. Mix these ingredients with a fork until a crumbly streusel topping forms.
Assemble and Bake
  1. Spread the sweet potato mixture evenly into the prepared baking dish.
  2. Sprinkle the pecan streusel topping evenly over the sweet potato mixture.
  3. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
Serve
  1. Allow the casserole to cool for a few minutes before serving warm.

Notes

For an extra touch of sweetness, you can add a handful of mini marshmallows on top of the streusel during the last 10 minutes of baking.
