Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
Wet Ingredients
  • 1.25 cups milk
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, eggs, vegetable oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix, as lumps are okay.
Cooking
  1. Preheat your Belgian waffle maker according to the manufacturer's instructions.
  2. Lightly grease the waffle maker with cooking spray or butter.
  3. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron, or as directed by your waffle maker.
  4. Cook for 3-5 minutes, or until the waffles are golden brown and crispy.
Serving
  1. Carefully remove the waffles from the iron and serve immediately with your favorite toppings.

Notes

For extra crispy waffles, slightly increase the cooking time. You can also separate egg yolks and whites, whisking the whites to stiff peaks and folding them in gently at the end for an even lighter texture.
