  • 3 cups confectioners' sugar

Cake Preparation
  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round baking pans by greasing and flouring them.

  3. In a separate large bowl, combine the buttermilk, oil, eggs, red food coloring, vinegar, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a smooth batter forms.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Frosting
  1. Allow the cakes to cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  2. For the frosting, beat the cream cheese and butter together in a medium bowl until light and fluffy.
  3. Gradually add the confectioners' sugar and vanilla extract, mixing until smooth and creamy.
