Preparation
- Slice the chicken breast, bell peppers, and onion into thin strips.
- In a medium bowl, toss the chicken with 1 tablespoon of fajita seasoning and 1 tablespoon of olive oil.
Cooking
- Heat a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the sliced bell peppers and onion to the skillet with the remaining fajita seasoning. Cook until vegetables are tender-crisp, about 5 minutes.
Assembly
- Divide the cooked rice among two bowls. Top with the chicken and vegetable mixture.
- Garnish each bowl with salsa, sour cream, a squeeze of fresh lime juice, chopped cilantro, and sliced avocado.
Notes
For extra heat, add a pinch of chili powder or cayenne pepper to the chicken seasoning. You can also customize your toppings with cheese, jalapeƱos, or corn.
