  • 1 head Cauliflower riced
  • 2 Eggs beaten
  • 2 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 cup Mixed Vegetables frozen or fresh
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated
  • 2 Green Onions chopped
Optional Garnishes
  • Sriracha to taste
  • Toasted Sesame Seeds for garnish

Method
 

Preparation
  1. Rice the cauliflower by pulsing florets in a food processor until they resemble rice grains, or use pre-riced cauliflower.
Cooking
  1. Heat a large pan or wok over medium-high heat, then add a small amount of oil.
  2. Add minced garlic and grated ginger to the pan, and stir-fry for about 30 seconds until fragrant.
  3. Stir in the riced cauliflower and mixed vegetables, cooking for 5-7 minutes until the cauliflower is tender-crisp.
  4. Create a well in the center of the pan, pour in the beaten eggs, and scramble them; then mix with the cauliflower and vegetables.
  5. Pour in the soy sauce and sesame oil, tossing everything together until well combined and heated through.
  6. Garnish with chopped green onions, and serve immediately.

Notes

For extra flavor, consider adding a pinch of white pepper or a dash of fish sauce during the final cooking step. Adjust soy sauce to taste, especially if you are sensitive to sodium.
