  • 1 (12-14 pounds) whole turkey
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 onion quartered
  • 2 carrots roughly chopped
  • 2 celery stalks roughly chopped
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 cup chicken broth

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C), then remove the turkey from its packaging, taking out the giblets and neck, and thoroughly pat it dry with paper towels.
  2. Rub the entire turkey with olive oil, then generously season it with salt and black pepper.
  3. Fill the turkey cavity with the quartered onion, chopped carrots, chopped celery, thyme sprigs, and rosemary sprigs.
Roasting
  1. Place the turkey on a roasting rack within a large roasting pan, and pour the chicken broth into the bottom of the pan.
  2. Roast for 2.5 to 3 hours, or until a meat thermometer inserted into the thickest part of the thigh reaches 165°F (74°C).
Finishing Touches
  1. Once cooked, take the turkey out of the oven, loosely tent it with foil, and let it rest for 15-20 minutes before carving and serving.
  2. (Optional) Utilize the pan drippings to prepare a delicious gravy to accompany your turkey.

Notes

For a crispier skin, you can brush the turkey with melted butter every hour during roasting. If the turkey skin starts to brown too quickly, loosely tent it with aluminum foil. The resting period is crucial for juicy turkey, allowing the juices to redistribute throughout the meat.
