Preparation
- Heat olive oil in a large pot or Dutch oven over medium heat. Sauté chopped onion until softened, about 5 minutes, then add minced garlic and cook for another minute until fragrant.
Cooking
- Add chicken breast to the pot and cook until browned, then stir in cumin, oregano, and chili powder, cooking for 1 minute until aromatic.
- Pour in chicken broth, cannellini beans, and diced green chilies; bring the mixture to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through.
- Remove chicken from the pot, shred it, and return it to the chili; stir in heavy cream and shredded Monterey Jack cheese until the cheese is melted and the chili is creamy.
Serving
- Serve hot, garnished with your favorite toppings such as fresh cilantro, diced avocado, or a dollop of sour cream.
Notes
For extra flavor, you can roast the chicken breast before shredding it. Adjust the spice level to your preference by adding more or less chili powder and a pinch of cayenne pepper for heat.
