Preparation
- Preheat oven to 400°F (200°C) and lightly grease a baking dish. Set up a breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mix of bread crumbs and grated Parmesan cheese.
Cooking
- Pound chicken breasts to an even thickness, then dredge each in flour, dip in egg, and coat thoroughly with the bread crumb mixture. Heat olive oil in a large skillet over medium-high heat and pan-fry the breaded chicken for 3-4 minutes per side until golden brown.
- Transfer chicken to the prepared baking dish, spoon marinara sauce over each piece, and top with shredded mozzarella and a sprinkle of Parmesan. Bake for 15-20 minutes, or until chicken is cooked through and cheese is bubbly and melted.

Notes
