Preparation
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper or silicone mats.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt, then set aside.
Mixing the Dough
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined, being careful not to overmix.
- Fold in the rolled oats and raisins until evenly distributed throughout the dough.
Baking
- Drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft.
- Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra chewiness, underbake the cookies slightly. You can also add a pinch of nutmeg or allspice for a richer flavor profile.
