Preparation
- Whisk the eggs in a small bowl and set aside. Prepare your green onions by chopping them finely.
Cooking
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the whisked eggs and scramble them until cooked through, then remove them from the skillet and set aside.
- Add the day-old cooked rice to the skillet, breaking up any clumps with a spoon. Stir-fry for 2-3 minutes until heated through and slightly crispy.
- Add the frozen peas and carrots to the rice and continue to stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
- Return the scrambled eggs to the skillet. Pour in the soy sauce and sesame oil, and mix everything together thoroughly, ensuring the sauce coats all the rice and ingredients.
- Serve the egg fried rice hot, garnished with chopped green onions.
Notes
For best results, use day-old rice as it is drier and prevents the fried rice from becoming mushy. Feel free to add other vegetables or proteins like cooked chicken or shrimp for variety.
