  • 8 small tortillas

Method
 

Preparation
  1. Slice the chicken breasts into thin strips and the bell peppers and onion into similar-sized strips.
Cooking
  1. Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
  2. Add chicken strips to the hot skillet and cook until browned and cooked through, about 5-7 minutes.
  3. Remove chicken from the skillet and set aside, then add the sliced bell peppers and onion to the same skillet.
  4. Sauté vegetables until they are tender-crisp, about 5-8 minutes.
  5. Return the cooked chicken to the skillet with the vegetables, sprinkle with fajita seasoning, and toss to combine.
  6. Cook for another 2-3 minutes, stirring occasionally, until everything is heated through and well coated with seasoning.
Serving
  1. Warm the tortillas according to package directions.
  2. Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings like salsa, sour cream, guacamole, and lime wedges.

Notes

For extra flavor, marinate the chicken in fajita seasoning and a splash of lime juice for at least 30 minutes before cooking. You can also customize your fajitas with different vegetables like zucchini or corn.
