  • 6 cups canned peach halves drained
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
For the Topping
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold, cut into cubes
  • 1/2 cup milk
To Serve
  • vanilla ice cream optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grab a 9x13 inch baking dish.
  2. In a large bowl, gently mix the drained peaches with sugar, cornstarch, and cinnamon.
  3. Pour this peach mixture into your prepared baking dish and spread it evenly.
Making the Topping
  1. In a separate medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut in the cold butter cubes using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  3. Stir in the milk until a soft dough forms.
Assembly and Baking
  1. Drop spoonfuls of the dough mixture over the peaches in the baking dish.
  2. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  3. Let the cobbler cool for a few minutes before serving, optionally with a scoop of vanilla ice cream.

Notes

For extra flavor, you can add a pinch of nutmeg or allspice to the peach mixture. If fresh peaches are in season, you can use about 6 cups peeled and sliced fresh peaches instead of canned. Just increase the sugar slightly (to 3/4 cup) if your fresh peaches aren't very sweet.
