Preparation
- Preheat your oven to 375°F (190°C) and grab a 9x13 inch baking dish.
- In a large bowl, gently mix the drained peaches with sugar, cornstarch, and cinnamon.
- Pour this peach mixture into your prepared baking dish and spread it evenly.
Making the Topping
- In a separate medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter cubes using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Stir in the milk until a soft dough forms.
Assembly and Baking
- Drop spoonfuls of the dough mixture over the peaches in the baking dish.
- Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
- Let the cobbler cool for a few minutes before serving, optionally with a scoop of vanilla ice cream.
Notes
For extra flavor, you can add a pinch of nutmeg or allspice to the peach mixture. If fresh peaches are in season, you can use about 6 cups peeled and sliced fresh peaches instead of canned. Just increase the sugar slightly (to 3/4 cup) if your fresh peaches aren't very sweet.
