  • 2 cups mozzarella cheese, shredded
  • 0.25 cup fresh basil, chopped for garnish
Other
  • 2 tbsp olive oil for frying

Equipment

  • Oven
  • Baking dish
  • Meat mallet
  • Shallow dishes
  • Large skillet

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with a light coating of cooking spray.
  2. Slice each chicken breast horizontally to create two thinner cutlets, then gently pound them to an even thickness for uniform cooking.
Breading the Chicken
  1. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Panko, Parmesan, garlic powder, oregano, salt, and pepper.
  2. Dredge each chicken cutlet first in flour, then in egg, and finally coat thoroughly with the Panko mixture.
Cooking the Chicken
  1. Heat olive oil in a large skillet over medium-high heat and pan-fry the breaded chicken cutlets for 3-4 minutes per side, until golden brown.
  2. Transfer the seared chicken to the prepared baking dish.
Baking and Serving
  1. Spoon marinara sauce over each chicken cutlet, sprinkle generously with mozzarella cheese, and bake for 15-20 minutes until the cheese is bubbly and golden.
  2. Garnish with fresh basil and serve immediately.

Notes

For an extra crispy crust, ensure the oil is hot enough before frying and don't overcrowd the skillet. You can serve this Chicken Parmesan with pasta, a side salad, or steamed vegetables for a complete meal.
