  • 0.5 tsp black pepper
  • 0.5 tsp dried thyme
  • 2 tbsp fresh parsley, chopped for garnish

Method
 

Preparation
  1. Heat olive oil in a large pot. Add carrots, celery, and onion, then cook until softened for about 5-7 minutes.

Notes

For an even quicker soup, use pre-chopped vegetables and pre-cooked rotisserie chicken.
