  • 1 pound Boneless, skinless chicken breast cut into 1/2-inch cubes
  • 2 Large eggs beaten
  • 1 cup Frozen mixed vegetables (peas, carrots, corn)
  • 3 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 2 tablespoons Vegetable oil
Aromatics and Seasonings
  • 2 Garlic cloves minced
  • 1 tablespoon Ginger (fresh) grated
  • 3 Green onions sliced, whites and greens separated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Garnish (Optional)
  • 1 tablespoon Toasted sesame seeds
  • 1 Additional sliced green onions for garnish

Method
 

Preparation
  1. Gather all ingredients, ensuring day-old rice is ready and chicken is cut into 1/2-inch cubes.
  2. Whisk eggs in a small bowl, and prepare a sauce by combining soy sauce and sesame oil.
Cooking
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat, then add beaten eggs and scramble until just set, removing and setting aside.
  2. Add remaining vegetable oil to the skillet, then cook chicken cubes until browned and cooked through, setting aside with the eggs.
  3. Sauté garlic, ginger, and green onion whites in the same skillet for 30 seconds until fragrant.
  4. Add day-old rice and mixed vegetables, breaking up the rice and stirring to combine everything.
  5. Pour in the soy sauce mixture, stirring well to coat the rice evenly, then return the cooked chicken and scrambled eggs to the skillet.
  6. Stir in the green onion greens and cook for another 1-2 minutes, adjusting seasoning with salt and pepper as needed.
Serving
  1. Serve the chicken fried rice immediately, optionally garnishing with toasted sesame seeds and extra green onions.

Notes

Using day-old rice is crucial for the best fried rice texture, as fresh rice can become clumpy. Feel free to adjust the amount of soy sauce and sesame oil to your taste. For extra flavor, you can add a pinch of white pepper. This recipe is also easily customizable with other proteins or vegetables you have on hand.
