Preparation
- Gather all ingredients, ensuring day-old rice is ready and chicken is cut into 1/2-inch cubes.
- Whisk eggs in a small bowl, and prepare a sauce by combining soy sauce and sesame oil.
Cooking
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat, then add beaten eggs and scramble until just set, removing and setting aside.
- Add remaining vegetable oil to the skillet, then cook chicken cubes until browned and cooked through, setting aside with the eggs.
- Sauté garlic, ginger, and green onion whites in the same skillet for 30 seconds until fragrant.
- Add day-old rice and mixed vegetables, breaking up the rice and stirring to combine everything.
- Pour in the soy sauce mixture, stirring well to coat the rice evenly, then return the cooked chicken and scrambled eggs to the skillet.
- Stir in the green onion greens and cook for another 1-2 minutes, adjusting seasoning with salt and pepper as needed.

Notes
