  • 1.5 cups graham cracker crumbs
  • 0.5 cup melted butter
  • 2 tablespoons sugar
Filling
  • 24 ounces cream cheese, softened
  • 1.5 cups sugar
  • 4 large eggs
  • 0.5 cup sour cream
  • 1 teaspoon vanilla extract

Method
 

Crust Preparation
  1. Combine graham cracker crumbs, melted butter, and sugar, then press the mixture into the bottom of a 9-inch springform pan.
Filling Preparation
  1. Beat softened cream cheese with sugar until smooth, then mix in eggs one at a time, followed by sour cream and vanilla extract.
Baking
  1. Pour the filling over the crust and bake at 325°F (160°C) for 60-70 minutes, or until the edges are set and the center jiggles slightly.
Cooling
  1. Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour, then remove and cool completely on a wire rack.
Chilling
  1. Once completely cooled, refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to set fully.
Serving
  1. Carefully remove the sides of the springform pan and slice the cheesecake into individual servings.
