  • 12 large mushrooms stems removed and finely chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup breadcrumbs
  • 2 tablespoons butter, melted
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C); then, in a medium bowl, combine the softened cream cheese, grated Parmesan cheese, minced garlic, chopped parsley, finely chopped mushroom stems, salt, and pepper, mixing until well combined.
  2. Carefully fill each mushroom cap with the cream cheese mixture, ensuring it is mounded nicely.
  3. In a small bowl, toss the breadcrumbs with melted butter; then, sprinkle the buttered breadcrumbs over the filled mushroom caps.
  4. Place the stuffed mushrooms on a baking sheet and bake for 18-20 minutes, or until the mushrooms are tender and the topping is golden brown.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the filling. These stuffed mushrooms are delicious served hot as an appetizer or a side dish. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently before serving.
