Preparation
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together milk, egg, and vanilla extract.
Combine Ingredients
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
Heat Oil
- Heat vegetable oil in a large, deep pot or Dutch oven to 375°F (190°C).
Fry Funnel Cakes
- Pour about 1/2 cup of batter into a funnel, then drizzle the batter into the hot oil in a circular motion, overlapping to create a web-like design. Fry for 1-2 minutes per side until golden brown.
Serve
- Remove the funnel cake from the oil and place it on a wire rack lined with paper towels to drain excess oil. Dust generously with powdered sugar before serving.
Notes
For extra flavor, you can add a pinch of cinnamon or nutmeg to the batter. Be sure to maintain the oil temperature for best results; too low and the funnel cake will be greasy, too high and it will burn quickly.
