Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken thighs or breast
  • 1 tbsp Chipotle paste
  • 1 tbsp Olive oil
  • Salt & pepper to taste
For the Rice
  • 1 cup Basmati or long-grain rice
  • 2 cups Water or chicken broth
  • 1 tbsp Lime juice
  • 2 tbsp Fresh cilantro, chopped
For the Salsa
  • 1 cup Tomatoes, diced
  • 0.25 cup Red onion, finely chopped
  • 0.5 fresh Jalapeño, minced
  • 1 tbsp Lime juice
  • 2 tbsp Fresh cilantro, chopped
  • Salt to taste
For Assembly (Optional Toppings)
  • 1 can Black beans, rinsed and drained
  • 0.5 cup Corn kernels (fresh, frozen, or canned)
  • 0.25 cup Sour cream or Greek yogurt
  • 0.5 cup Shredded lettuce
  • 0.25 cup Shredded cheese
  • Avocado or guacamole sliced or mashed

Method
 

Chicken Preparation
  1. Cut chicken into bite-sized pieces and toss with chipotle paste, olive oil, salt, and pepper.
  2. Heat a skillet over medium-high heat and cook chicken until browned and cooked through, about 5-7 minutes.
Rice Preparation
  1. Rinse rice thoroughly, then combine with water or broth in a saucepan; bring to a boil, then reduce heat and simmer for 15-20 minutes until liquid is absorbed.
  2. Once cooked, fluff the rice with a fork and stir in lime juice and fresh cilantro.
Salsa Preparation
  1. In a medium bowl, combine diced tomatoes, red onion, minced jalapeño, lime juice, fresh cilantro, and salt.
  2. Stir well and let it sit for a few minutes to allow flavors to meld.
Assembly
  1. Divide rice into serving bowls, then top with cooked chicken.
  2. Add optional toppings such as black beans, corn, salsa, sour cream, lettuce, cheese, and avocado as desired.

Notes

Feel free to customize your burritos bowls with your favorite toppings such as grilled vegetables, different types of beans, or a spicy hot sauce. For added convenience, prepare the chicken and rice ahead of time and store in the refrigerator. Reheat gently before assembling your bowls.
