  • 3 cups cooked white rice
  • 1 lb shrimp peeled and deveined
  • 2 eggs
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 1 cup frozen peas and carrots
  • 0.5 onion diced
  • 2 cloves garlic minced

  • green onions chopped

Preparation
  1. Prepare your ingredients by chopping the onion and mincing the garlic. Whisk the eggs in a small bowl and set aside.
Cooking
  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink, then remove from the skillet.
  2. Add diced onion and cook until softened, then add minced garlic and cook for another minute until fragrant.
  3. Push vegetables to one side, pour whisked eggs into the empty space, and scramble until cooked through.
  4. Add cooked rice, frozen peas and carrots, soy sauce, and sesame oil to the skillet; stir-fry for 3-5 minutes, breaking up any clumps of rice.
  5. Return the cooked shrimp to the skillet and toss everything together to combine, ensuring it is heated through.
Serving
  1. Garnish with chopped green onions and serve hot.

Notes

For best results, use day-old cooked rice, as it’s less sticky and fries up better. Adjust soy sauce to taste, and feel free to add other vegetables like bell peppers or corn. You can also add a dash of hot sauce for a spicy kick.
