  • 4 cups vegetable broth
  • 14.5 oz canned diced tomatoes
Spices
  • 1 tsp dried thyme
  • 1 bay leaf
  • salt and pepper to taste

Method
 

Preparation
  1. Chop all vegetables into bite-sized pieces; mince the garlic and dice the onion.
  2. Heat a large pot or Dutch oven over medium heat.
Cooking
  1. Sauté onions for 5 minutes until softened, then add garlic and cook for another minute until fragrant.
  2. Stir in carrots, potatoes, celery, vegetable broth, diced tomatoes, thyme, and bay leaf; bring the mixture to a boil.
  3. Reduce heat to low, cover, and simmer for 20-25 minutes, or until vegetables are tender.
  4. Remove bay leaf, then season with salt and pepper to taste.

Notes
