Preparation
- Chop all vegetables into bite-sized pieces; mince the garlic and dice the onion.
- Heat a large pot or Dutch oven over medium heat.
Cooking
- Sauté onions for 5 minutes until softened, then add garlic and cook for another minute until fragrant.
- Stir in carrots, potatoes, celery, vegetable broth, diced tomatoes, thyme, and bay leaf; bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, or until vegetables are tender.
- Remove bay leaf, then season with salt and pepper to taste.
Serving
- Serve the stew hot as is, or with a side of crusty bread.
Notes
For extra flavor, you can add a pinch of smoked paprika. This stew is also great for meal prepping; it stores well in the refrigerator for up to 3-4 days.
