Prepare the Filling
- Peel, core, and slice the apples, then place them in a large bowl.
- In a separate bowl, combine sugar, flour, cinnamon, and nutmeg.
- Pour the dry mixture over the apples, add lemon juice, and toss to coat evenly.
Prepare the Crust
- Combine flour and salt in a large bowl, then cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until the dough just comes together, then divide it in half, flatten each into a disk, wrap, and chill for at least 30 minutes.
- On a lightly floured surface, roll out one disk of dough and carefully transfer it to a 9-inch pie plate, trimming any excess and crimping the edges as desired.
Assemble and Bake
- Pour the apple filling into the pie crust.
- Roll out the second disk of dough and place it over the filling, then trim, crimp the edges, and cut several slits in the top for venting.
- Bake at 425°F (220°C) for 15 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
Notes
For extra flavor, consider adding a pinch of allspice or ginger to the apple filling. If the crust starts to brown too quickly, you can loosely tent the pie with aluminum foil. Serve warm with a scoop of vanilla ice cream for a classic dessert experience.
