Ingredients
  

Pasta
  • 12 ounce linguine
Sauce
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes optional

Method
 

Cooking Pasta
  1. Cook the linguine according to package directions in a large pot of salted boiling water.
  2. Before draining, reserve 1 cup of pasta water and then drain the pasta.
Cooking Shrimp Scampi
  1. Melt butter in a large skillet over medium heat, then add garlic and cook for 1 minute until fragrant.
  2. Add shrimp and red pepper flakes, cooking for 2-3 minutes per side until the shrimp turn pink and opaque.
  3. Pour in wine or broth and lemon juice, bringing the mixture to a simmer for 2 minutes to reduce slightly.
Combining and Finishing
  1. Add the cooked and drained linguine to the skillet with the shrimp sauce, tossing to combine.
  2. If the sauce is too thick, add some of the reserved pasta water until it reaches your desired consistency.
  3. Stir in fresh parsley and serve immediately, garnished with extra parsley if desired.
