Ingredients
  

Cucumber & Tomato Salad
  • 1 large cucumber
  • 1 cup cherry tomatoes
  • 0.25 medium red onion
  • 2 tbsp fresh dill
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste
Corn & Avocado Salad
  • 2 cups corn kernels
  • 1 large avocado
  • 1 medium red bell pepper
  • 0.25 cup cilantro
  • 2 tbsp lime juice
  • salt to taste
  • black pepper to taste
Watermelon & Feta Salad
  • 4 cups watermelon cubes
  • 0.5 cup feta cheese
  • 0.25 cup fresh mint
  • 2 tbsp balsamic glaze

Method
 

Cucumber & Tomato Salad
  1. Dice the cucumber and halve the cherry tomatoes, then thinly slice the red onion.
  2. Chop the fresh dill, then combine all vegetables and dill in a large bowl.
  3. Whisk together red wine vinegar, olive oil, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad and toss to combine; chill before serving.
Corn & Avocado Salad
  1. If using fresh corn, cook and remove kernels; dice the avocado and red bell pepper.
  2. Chop the cilantro, then combine corn, avocado, bell pepper, and cilantro in a bowl.
  3. Drizzle lime juice over the salad and season with salt and pepper.
  4. Toss gently and serve immediately.
Watermelon & Feta Salad
  1. Cube the watermelon, crumble the feta, and chop the fresh mint.
  2. Gently combine watermelon, feta, and mint in a large bowl.
  3. Drizzle with balsamic glaze just before serving.

Notes

For best flavor, allow salads to chill for at least 15-20 minutes before serving. You can prepare these salads a few hours in advance, but add avocado and balsamic glaze just before serving to maintain freshness and appearance.
