- In a large pot, combine diced potatoes and chicken broth; bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-12 minutes.
- While potatoes are cooking, melt butter in a small saucepan over medium heat, then whisk in flour and cook for 1 minute to create a roux.
- Gradually whisk milk and heavy cream into the roux until smooth, then add this mixture to the pot with the cooked potatoes and broth.
- Stir in salt and pepper, bring the soup to a gentle simmer, and cook for another 5 minutes, stirring occasionally, until slightly thickened.
- Serve hot, garnished with shredded cheddar cheese and chopped green onions.
Notes
For a richer flavor, you can sauté some diced onions and garlic before adding the potatoes and broth. This soup is also great with a sprinkle of crispy bacon bits.
