  • 4 medium potatoes peeled and diced
  • 4 cups chicken broth
  • 1 cup milk
  • 0.5 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup cheddar cheese shredded, for garnish
  • 2 tbsp green onions chopped, for garnish

Method
 

Instructions
  1. In a large pot, combine diced potatoes and chicken broth; bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-12 minutes.
  2. While potatoes are cooking, melt butter in a small saucepan over medium heat, then whisk in flour and cook for 1 minute to create a roux.
  3. Gradually whisk milk and heavy cream into the roux until smooth, then add this mixture to the pot with the cooked potatoes and broth.
  4. Stir in salt and pepper, bring the soup to a gentle simmer, and cook for another 5 minutes, stirring occasionally, until slightly thickened.
  5. Serve hot, garnished with shredded cheddar cheese and chopped green onions.

Notes

For a richer flavor, you can sauté some diced onions and garlic before adding the potatoes and broth. This soup is also great with a sprinkle of crispy bacon bits.
