Ingredients

Main Ingredients
  • 1.5 lb beef sirloin or tenderloin cut into 1-inch cubes
  • 1 onion grated
  • 3 cloves garlic minced
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 0.5 tsp coriander
  • 1 tsp salt
  • 0.05 tsp black pepper
  • 2 bell peppers various colors, cut into 1-inch pieces
  • 1 cup cherry tomatoes
For Serving
  • pita bread warm
  • fresh parsley chopped for garnish
  • yogurt sauce (optional)

Equipment

  • large mixing bowl
  • grill (outdoor or indoor)
  • skewers (metal or wooden)
  • tongs

Method

Preparation
  1. In a large bowl, combine the beef cubes, grated onion, minced garlic, lemon juice, olive oil, paprika, cumin, coriander, salt, and black pepper. Mix thoroughly to ensure the beef is evenly coated and then refrigerate for at least 30 minutes, or preferably for a few hours, to allow the flavors to meld.
  2. If using wooden skewers, remember to soak them in water for at least 30 minutes prior to grilling to prevent them from burning.
Assembling and Cooking
  1. Preheat your grill to medium-high heat, ensuring it is clean and lightly oiled to prevent sticking.
  2. Thread the marinated beef cubes onto the skewers, alternating with pieces of bell pepper and cherry tomatoes.
  3. Place the assembled kebabs on the preheated grill and cook for 10-15 minutes, turning occasionally, until the beef is cooked to your desired doneness and has nice char marks.
  4. Carefully remove the cooked kebabs from the grill and let them rest for a few minutes before serving.
Serving
  1. Serve the hot beef kebabs immediately with warm pita bread, a sprinkle of fresh parsley, and a side of yogurt sauce if desired.

Notes

1. Marinate for flavor: Don't skip the marinating step; even 30 minutes makes a difference for tenderness and taste. 2. Soak wooden skewers: This prevents them from catching fire on the grill. 3. Don't overcrowd: Give your kebabs space on the grill for even cooking and a good sear. 4. Alternate ingredients: It makes for a more appealing and evenly cooked kebab. 5. Rest the meat: A few minutes of resting after grilling helps keep the beef juicy.
