Ingredients
  

Granola Base
  • 3 cups rolled oats
  • 1 cup mixed nuts (almonds, walnuts, pecans)
  • 0.5 cup shredded coconut
  • 1 tsp cinnamon
  • 0.5 tsp salt
Wet Ingredients
  • 0.5 cup maple syrup or honey
  • 0.25 cup coconut oil (melted)
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.
Mixing
  1. In a large bowl, combine the rolled oats, mixed nuts, shredded coconut, cinnamon, and salt.
  2. In a separate bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract.
  3. Pour the wet ingredients over the dry ingredients and mix until everything is evenly coated.
Baking
  1. Spread the granola mixture in a single layer on the prepared baking sheet.
  2. Bake for 25-30 minutes, stirring halfway through, until golden brown and crispy.
  3. Let the granola cool completely on the baking sheet; it will crisp up further as it cools.
Storage
  1. Once cooled, store the granola in an airtight container at room temperature for up to 2 weeks.

Notes

Feel free to customize your granola by adding dried fruits like cranberries or raisins after baking, or chocolate chips once cooled. For extra clusters, press the granola down firmly before baking and avoid stirring too much during the last 10 minutes of baking.
