Ingredients
  

Noodles
  • 200 g Asian noodles (e.g., somen, soba, ramen)
Vegetables
  • 1 medium Cucumber julienned
  • 1 medium Carrot julienned
  • 0.5 medium Red bell pepper thinly sliced
Dressing
  • 4 tbsp Soy sauce
  • 2 tbsp Rice vinegar
  • 1 tbsp Sesame oil
  • 1 tbsp Honey or maple syrup
  • 1 tsp Ginger grated
  • 1 clove Garlic minced
Garnish
  • 2 stalks Green onions chopped
  • 1 tbsp Sesame seeds toasted

Method
 

Prepare Noodles
  1. Cook the Asian noodles according to package directions, then rinse them with cold water and drain well to cool them down.
Prepare Vegetables
  1. Julienne the cucumber and carrot, and thinly slice the red bell pepper.
Make Dressing
  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.
Assemble Salad
  1. Combine the cooled noodles, julienned cucumber, carrot, and sliced bell pepper in a large bowl.
Dress and Garnish
  1. Pour the dressing over the noodle mixture and toss gently to combine; garnish with chopped green onions and toasted sesame seeds before serving.

Notes

For extra protein, add cooked chicken, tofu, or shrimp. Adjust the amount of dressing to your preference. This salad is best served chilled.
