- In a large pot or Dutch oven, cook the sliced smoked sausage over medium heat until browned and slightly crispy.
- Remove the sausage from the pot and set aside, reserving some of the drippings.
- Add the chopped onion to the pot and sauté until softened, about 3-5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced potatoes, chopped cabbage, and chicken broth to the pot.
- Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the potatoes and cabbage are tender.
- Stir in the Cajun seasoning and the cooked smoked sausage.
- Cook for another 5 minutes to allow the flavors to meld.

Notes
For extra flavor, you can add a bay leaf to the pot while simmering. Adjust Cajun seasoning to your spice preference. A touch of hot sauce can be added at the end for an extra kick.
