Preparation
- Peel and dice all three types of potatoes into 1-inch cubes.
- Chop the onion and mince the garlic.
Cooking the Soup
- In a large pot or Dutch oven, melt the butter over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Sprinkle in the flour and cook, stirring constantly, for 1-2 minutes to create a roux.
- Gradually whisk in the chicken or vegetable broth until smooth, ensuring no lumps.
- Add the diced potatoes, salt, and black pepper to the pot, then bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
- Once the potatoes are tender, lightly mash about a quarter of them directly in the pot using a potato masher or the back of a spoon to thicken the soup.
- Stir in the milk and heavy cream, heating through gently without boiling.
- Taste and adjust seasoning as needed, adding more salt and pepper if desired.
Serving
- Ladle the hot soup into bowls.
- Garnish with fresh chives and any desired optional toppings like bacon bits, shredded cheese, or a dollop of sour cream.
