Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease a 9-inch cast iron skillet or an 8x8 inch baking dish.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until well combined.
Mixing and Baking
  1. In a separate medium bowl, whisk together the eggs, milk, and melted butter.
  2. Pour the wet ingredients into the dry ingredients and mix until just combined; be careful not to overmix.
  3. Pour the batter into the prepared skillet or baking dish and bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  4. Let the cornbread cool for a few minutes before slicing and serving.

Notes

For extra sweetness, you can add 1/4 cup of honey or maple syrup to the wet ingredients. A pat of butter on a warm slice of cornbread is highly recommended!
