Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Peel the sweet potatoes, cut them into 1-inch cubes, and boil them in a large pot of salted water until they are very tender, which usually takes about 15-20 minutes.
- Drain the sweet potatoes thoroughly, then transfer them to a large mixing bowl and mash them until smooth.
Assemble the Casserole
- Add melted butter, granulated sugar, brown sugar, milk, vanilla extract, and salt to the mashed sweet potatoes, mixing well until the mixture is smooth and creamy.
- In a separate medium bowl, combine flour, brown sugar, cold butter cubes, chopped pecans, and cinnamon for the streusel topping, mixing with your fingers or a pastry blender until a crumbly mixture forms.
- Spread the sweet potato mixture evenly into the prepared baking dish and then sprinkle the pecan streusel topping evenly over the sweet potato layer.
Bake
- Bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
- Let the casserole cool slightly before serving.
Notes
For an extra touch, you can add a pinch of nutmeg or allspice to the sweet potato mixture. If you don't have a pastry blender, you can use two knives to cut in the butter for the streusel topping.
