Ingredients
  

Falafel
  • 1 cup Dried chickpeas soaked overnight
  • 1/2 Onion chopped
  • 1/2 cup Fresh parsley chopped
  • 1/4 cup Fresh cilantro chopped
  • 3 Garlic cloves minced
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1/2 tsp Baking soda
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 3 cups Vegetable oil for frying

Method
 

Preparation
  1. Soak dried chickpeas in cold water overnight, then drain them thoroughly.
  2. Combine the soaked chickpeas, onion, parsley, cilantro, garlic, cumin, coriander, baking soda, salt, and pepper in a food processor, blending until the mixture is coarse but holds together.
  3. Form the falafel mixture into small balls or patties.
Cooking
  1. Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  2. Carefully fry the falafel in batches for 3-5 minutes until they are golden brown and crispy.
  3. Remove falafel from oil and place on a paper towel-lined plate to drain excess oil.

Notes

Ensure chickpeas are thoroughly soaked and completely dry before blending to achieve the best texture and prevent the falafel from falling apart during frying.
