  • 1 28-ounce can Canned diced tomatoes

  • 6 cups Vegetable broth
  • 2 cups Water
  • 2 tablespoons Olive oil
  • 3 cloves Garlic minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. Chop all vegetables into bite-sized pieces; mince the garlic.
  2. Heat olive oil in a large pot or Dutch oven over medium heat.
Cooking
  1. Add onion, carrots, and celery to the pot and sauté until softened, about 5-7 minutes.
  2. Stir in minced garlic, oregano, and basil; cook for another minute until fragrant.
  3. Add diced tomatoes, potatoes, zucchini, vegetable broth, and water to the pot.
  4. Bring the soup to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until vegetables are tender.
  5. Season with salt and pepper to taste before serving.

Notes

For extra flavor, roast some of the vegetables before adding them to the soup. You can also add a bay leaf during simmering and remove it before serving.
