A foolproof method for making delicious chicken or beef fajitas right in your own kitchen. This recipe is perfect for a quick weeknight meal or a flavorful weekend feast with friends and family.

Ingredients
  

For the Fajitas
  • 1.5 lbs chicken breast or beef skirt steak, thinly sliced
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 lime, juiced
For the Fajita Seasoning
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp oregano, dried
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For Serving
  • 8 tortillas
  • salsa
  • sour cream
  • guacamole
  • shredded lettuce
  • shredded cheese

Method
 

Preparation
  1. In a small bowl, combine all fajita seasoning ingredients and mix well.
  2. In a separate bowl, toss the sliced chicken or beef with half of the fajita seasoning and 1 tablespoon of olive oil, ensuring the meat is evenly coated.
Cooking
  1. Heat the remaining 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
  2. Add the sliced bell peppers and onion to the hot skillet and cook for 5-7 minutes, stirring occasionally, until they are tender-crisp. Remove them from the skillet and set aside.
  3. Add the seasoned meat to the same skillet and cook for 6-8 minutes, or until it is cooked through and lightly browned.
  4. Return the cooked vegetables to the skillet with the meat, add the remaining fajita seasoning and lime juice, and stir everything together to combine. Cook for another 2-3 minutes to allow the flavors to meld.
Serving
  1. Warm the tortillas according to package directions, then serve the fajita mixture in the warm tortillas with your favorite toppings such as salsa, sour cream, guacamole, shredded lettuce, and cheese.

Notes

For extra flavor, marinate the meat for at least 30 minutes, or even overnight, in the fajita seasoning and olive oil mixture. Adjust the chili powder and other spices to your preferred level of heat. You can also add a pinch of cayenne pepper for a spicier kick.
