  • 1 can (15 oz) chickpeas rinsed and drained
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 1-2 cloves garlic minced
  • 2 tbsp olive oil plus more for serving
  • 2-4 tbsp cold water or ice water
  • 1/2 tsp salt or to taste
  • 1/2 tsp cumin

Instructions
  1. Combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and cumin in a food processor, then process until the mixture is thick and creamy, scraping down the sides as needed.
  2. With the food processor running, gradually add 2-4 tablespoons of cold water or ice water, one tablespoon at a time, until the hummus reaches your desired smooth and creamy consistency.
  3. Transfer the hummus to a serving bowl, drizzle with extra olive oil, and garnish with paprika or fresh parsley if desired; serve immediately or store in an airtight container.

Notes

For extra creamy hummus, ensure your chickpeas are well-cooked or use good quality canned chickpeas. Adding ice water while blending helps create a lighter, fluffier texture.
