  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 0.25 cup lemon juice
  • 0.5 cup chicken broth
  • 2 tbsp capers drained
  • 2 tbsp fresh parsley chopped

Preparation
  1. Slice chicken breasts horizontally to create thinner cutlets; season with salt and pepper.
  2. Dredge each chicken cutlet in flour, ensure it's fully coated, then shake off any excess flour.
Cooking
  1. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  2. Sear chicken cutlets for 3-4 minutes per side, until golden brown, then remove from the skillet and set aside.
  3. In the same skillet, melt the remaining butter and add lemon juice, chicken broth, and capers.
  4. Return chicken to the skillet, simmer for 1-2 minutes, then garnish with fresh parsley and serve immediately.

Serve with pasta or rice to soak up the delicious sauce. For a richer flavor, consider adding a splash of white wine to the sauce with the chicken broth.
