  • 15 ounces canned pumpkin puree
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips
  • 1/2 cup raisins
  • 1/4 cup pumpkin seeds for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, combine the pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract.
Mixing and Baking
  1. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  2. If desired, fold in any optional add-ins like chopped walnuts, chocolate chips, or raisins.
  3. Pour the batter into the prepared loaf pan and sprinkle with pumpkin seeds if using.
  4. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
Cooling
  1. Let the pumpkin bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

For an extra moist bread, you can add 1/4 cup of applesauce to the wet ingredients. This bread freezes beautifully for up to 3 months. Wrap it tightly in plastic wrap and then in foil.
