Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, combine the pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract.
Mixing and Baking
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- If desired, fold in any optional add-ins like chopped walnuts, chocolate chips, or raisins.
- Pour the batter into the prepared loaf pan and sprinkle with pumpkin seeds if using.
- Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
Cooling
- Let the pumpkin bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
For an extra moist bread, you can add 1/4 cup of applesauce to the wet ingredients. This bread freezes beautifully for up to 3 months. Wrap it tightly in plastic wrap and then in foil.
