Steak
  • 1 lb Skirt steak or flank steak thinly sliced
  • 1 tbsp Olive oil
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
Rice
  • 1 cup White rice
  • 2 cups Water
  • 0.5 tsp Salt
Toppings
  • 1 can Black beans rinsed and drained
  • 0.5 cup Corn fresh or frozen
  • 0.5 cup Salsa
  • 0.25 cup Sour cream or Greek yogurt
  • 1 Avocado diced
  • 2 Lime wedges

Method
 

Prepare the Steak
  1. Slice the steak into thin strips, then in a bowl, toss with olive oil, chili powder, cumin, garlic powder, salt, and black pepper until well coated.
Cook the Rice
  1. Combine rice, water, and salt in a saucepan, bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
Cook the Steak
  1. Heat a large skillet over medium-high heat, then add the seasoned steak and cook for 2-3 minutes per side until browned and cooked to your desired doneness.
Assemble the Bowls
  1. Divide the cooked rice into serving bowls, then top with the cooked steak, black beans, corn, salsa, sour cream or Greek yogurt, diced avocado, and a lime wedge.

Notes

Adjust spice levels to your preference. For extra flavor, marinate the steak for at least 30 minutes before cooking. Feel free to customize with your favorite toppings like cheese, guacamole, or hot sauce!
