Step 1: Prepare the Filling
- Preheat your oven to 425°F (220°C). In a large saucepan or Dutch oven, melt the butter over medium heat. Sauté the chopped onion until it becomes tender, about 5 minutes.
Step 2: Create the Roux and Combine
- Stir in the flour and cook for 1 minute, creating a roux. Gradually whisk in the chicken broth and milk until the mixture is smooth and thickened.
Step 3: Assemble the Pie
- Remove from heat and stir in the shredded chicken, frozen mixed vegetables, salt, and pepper. Pour the filling into a 9-inch pie dish and top with one pie crust, crimping the edges.
Step 4: Bake to Golden Perfection
- Cut a few slits in the top crust for steam to escape. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
Notes
For extra flavor, you can add a pinch of garlic powder or onion powder to the filling. If you like a thicker crust, use puff pastry instead of pie crust. Serve hot and enjoy your homemade chicken pot pie!
