Ingredients
  

Salad
  • 1 large head of romaine lettuce
  • 2 cups cooked chicken breast, diced
  • 6 slices bacon, cooked and crumbled
  • 4 hard-boiled eggs, chopped
  • 1 avocado, diced
  • 2 medium tomatoes, chopped
  • 4 ounces blue cheese, crumbled
Vinaigrette
  • 3 tablespoons red wine vinegar
  • 6 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Salad
  1. Wash and chop the romaine lettuce, then arrange it as the base of your serving platter or individual plates.
  2. Arrange the diced chicken breast, crumbled bacon, chopped hard-boiled eggs, diced avocado, chopped tomatoes, and crumbled blue cheese in distinct rows over the lettuce.
Make the Vinaigrette
  1. In a small bowl, whisk together the red wine vinegar, extra virgin olive oil, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  2. Drizzle the vinaigrette evenly over the prepared salad just before serving.

Notes
