Preparation
  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round baking pans by greasing and flouring them; you can also line the bottoms with parchment paper for easier removal.
  2. In a large bowl, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, baking powder, and salt, then whisk them together until thoroughly mixed.
  3. In a separate medium bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing on low speed with an electric mixer until just combined, being careful not to overmix.
  5. Carefully stir in the boiling water until the batter is smooth and a bit thin.
  6. Divide the batter evenly between the two prepared baking pans.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center of the cakes comes out clean.
  8. Allow the cakes to cool in the pans for 10-15 minutes before inverting them onto a wire rack to cool completely.

Notes

For an extra rich chocolate flavor, use Dutch-processed cocoa powder. Make sure all your wet ingredients are at room temperature for a smoother batter.
