  • 2 large eggs
  • 8 ounces shrimp (peeled and deveined)
  • 1/2 cup char siu or cooked chicken (diced)
  • 1/2 cup frozen peas and carrots
  • 2 green onions (sliced)
Sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper
For cooking
  • 2 tablespoons vegetable oil

Method
 

Preparation
  1. Whisk eggs in a small bowl, and then set aside.
  2. In another bowl, combine soy sauce, oyster sauce, sesame oil, and white pepper. Mix well and set aside.
  3. Ensure your day-old cooked rice is separated and free of clumps before cooking.
Cooking
  1. Heat a large wok or skillet over high heat, then add one tablespoon of vegetable oil. Swirl to coat the pan.
  2. Add the whisked eggs and scramble quickly until just cooked through, then remove and set aside.
  3. Add the remaining vegetable oil to the wok. Once hot, add shrimp and cook for 1-2 minutes per side until pink and opaque, then remove.
  4. Add diced char siu or chicken and frozen peas and carrots to the wok. Stir-fry for 2-3 minutes until heated through.
  5. Add the day-old rice to the wok, breaking up any clumps with your spatula. Continue to stir-fry for 3-5 minutes, ensuring all the rice is heated and slightly toasted.
  6. Pour the prepared sauce over the rice and vegetables. Toss everything together, making sure the sauce evenly coats the rice.
  7. Return the cooked eggs and shrimp to the wok. Add sliced green onions and continue to stir-fry for another 1-2 minutes, until all ingredients are well combined and hot.
  8. Serve immediately and enjoy your 5-star fried rice.

Notes

For best results, use rice that has been cooked and refrigerated for at least a day. This helps prevent the fried rice from becoming mushy.
