Ingredients

Chicken and Dumplings
  • 2 lbs chicken breast boneless, skinless
  • 6 cups chicken broth
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup butter melted
  • 0.75 cup milk
Vegetables (Optional)
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 medium onion chopped

Equipment

  • large pot or Dutch oven
  • large bowl
  • whisk
  • spoon

Method

Chicken Preparation
  1. Cook the chicken breast in chicken broth until thoroughly cooked, then remove and shred it into bite-sized pieces. Set the shredded chicken aside, keeping the broth in the pot.
Dumpling Preparation
  1. In a bowl, combine flour, baking powder, salt, and pepper; then in a separate bowl, whisk together melted butter and milk. Gradually add the wet ingredients to the dry mixture, mixing until a soft dough forms.
Cooking and Assembly
  1. Bring the chicken broth to a gentle simmer, then drop spoonfuls of the dumpling dough into the simmering broth. Cover and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy. Finally, stir in the shredded chicken and any optional vegetables, cooking until heated through.

Notes

For extra flavor, you can sauté the vegetables in a little butter before adding them to the broth. Ensure the broth is simmering, not boiling, to prevent the dumplings from disintegrating. Do not overcrowd the pot with dumplings; cook them in batches if necessary.
