Preparation
- Preheat your oven to 425°F (220°C) and butter and flour five 6-ounce ramekins.
Melt Chocolate and Butter
- Melt the butter and bittersweet chocolate together in a heatproof bowl set over a saucepan of simmering water or in a microwave, stirring until smooth, then set aside to cool slightly.
Whisk Eggs and Sugar
- In a separate bowl, whisk together the whole eggs, egg yolks, and granulated sugar until light and creamy.
Combine Ingredients
- Gently fold the cooled chocolate mixture into the egg mixture, then mix in the flour and salt until just combined.
Bake
- Divide the batter evenly among the prepared ramekins and place them on a baking sheet, then bake for 10-12 minutes until the edges are set but the center remains gooey.
Serve
- Carefully invert each lava cake onto a dessert plate immediately, allowing the cake to release naturally.
Notes
For an extra touch, serve with a scoop of vanilla ice cream or a sprinkle of powdered sugar. Do not overbake, as this will prevent the center from being gooey.
