  • 6 ounces bittersweet chocolate
  • 2 large eggs
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour

Equipment

  • Ramekins (6-ounce)
  • Heatproof bowl
  • Saucepan
  • Whisk
  • Baking sheet

Method

Preparation
  1. Preheat your oven to 425°F (220°C) and butter and flour five 6-ounce ramekins.
Melt Chocolate and Butter
  1. Melt the butter and bittersweet chocolate together in a heatproof bowl set over a saucepan of simmering water or in a microwave, stirring until smooth, then set aside to cool slightly.
Whisk Eggs and Sugar
  1. In a separate bowl, whisk together the whole eggs, egg yolks, and granulated sugar until light and creamy.
Combine Ingredients
  1. Gently fold the cooled chocolate mixture into the egg mixture, then mix in the flour and salt until just combined.
Bake
  1. Divide the batter evenly among the prepared ramekins and place them on a baking sheet, then bake for 10-12 minutes until the edges are set but the center remains gooey.
Serve
  1. Carefully invert each lava cake onto a dessert plate immediately, allowing the cake to release naturally.

Notes

For an extra touch, serve with a scoop of vanilla ice cream or a sprinkle of powdered sugar. Do not overbake, as this will prevent the center from being gooey.
